How to Change 2-Step Verification Phone Number on PlayStation
Had to do this last month. You just need to sign in to your account, hit up Security Settings, and modify your 2-step verification number there. Took me like 5 minutes.

Log into your PlayStation account, go to Security Settings, and under 'Two-Step Verification,' select 'Edit' to change your phone number. Easy peasy!
Honestly, just disable 2-step verification, then re-enable it with your new number. Works like a charm!
