You can't directly change your age on Xbox 360. But you can create a new Microsoft account with the correct age info. It might be a bit of a hassle, but it'll solve the problem!
Tried every setting on my Xbox 360. Nope, can't change the age. New Microsoft account is the way to go.
From personal experience, I had to make a new Microsoft account to set the right age. It was annoying, but it worked. Keep your old account for the game saves.
