To change your companion's equipment in Starfield, just open your inventory, select the companion tab, and equip them with the desired gear. Easy peasy!

From my experience, you can equip companions with new gear by interacting with them and choosing the 'trade' option. Then, just drag and drop the items you'd like them to use.
