I've done this a few times: go to Settings, select Account Management, then Account Information. Next, choose Profile and finally Online ID. Just follow the instructions to confirm the change.

Easy peasy! Just go to Settings > Account Management > Account Information > Profile > Online ID. Follow the prompts, and voila, new gamertag!
