You can't change your hair mid-match, so make sure you do it from the main menu or the Inkopolis Square lobby. Trust me, I've tried.
Just visit Inkopolis Square, head to the mirror in the lobby, and you'll be able to change your hairstyle there.
Dude, just go to the player settings in the options menu from the start screen. The game walks you through it.
