Just go to the lobby, press X, select Options, and then customize your Inkling's hair under the Style tab!

To change your hair in Splatoon 2, head to the Style tab in the customization section on the main menu, and you can pick your Inkling's hairstyle there. Easy peasy lemon squeezy!
