Just click the 'Like' button again to unlike it, and then choose a new reaction (Love, Haha, Wow, etc.).
As someone who's done this a lot, you just have to unlike the post first and then pick your new reaction by holding down the like button. Simple!

You can't directly change a like into another reaction, but you can unlike the post and then react again with a different one.
