Just open the map, select the mission, and change the difficulty from the popup menu. It's simple and quick.

On your map screen, hover over the mission you want to change, press the button displayed for difficulty options, and select your preferred difficulty level. Boom, done!

You need to have completed the mission once on Story mode to unlock the difficulty settings. Then just go to the map, hover over the mission, and choose a new difficulty. Took me a while to figure this out too!
