Yo, just head over to the Xbox website or use your console. On the website, sign in, go to your profile, and select 'Customize' to change your gamertag. On the console, go to your profile, select 'My Profile', and then 'Customize Profile'. Easy peasy!

You can change your gamertag by going to the Xbox app on your phone, too. Click on your profile, then 'Customize', and change your gamertag there.
