Head to the player creation/edit screen in RTTS or franchise mode, then choose the 'Edit Player' option. From there, you can customize your pitch types. Curveball, anyone?

Simply go to your player in RTTS or franchise, select 'Edit Player,' and then tweak your pitch repertoire. Easy peasy!
In RTTS or franchise mode, go to 'Edit Player' to change pitch types. Trust me, I've added a filthy slider this way!
You can't change pitch types directly during gameplay. Editing your player in RTTS or franchise is the way to go.
