You've got to log into your PlayStation Network account on a web browser, then go to Account Settings > Sign-in ID (Email Address). Update it to your new email and you'll be good to go!

From personal experience, it's easiest on a PC browser. Just log in to your PSN account, head to Account Settings, and update your email under Sign-In ID.

Just hop into your PSN account management settings on your console or a PC and change the email under 'Sign-In ID'. Make sure to verify the new email afterward!
