You can also start with text or a blank story. Select the doodle icon, pick your color, and hold down on the background. Magic!
Why bother? Just use a filter.
From personal experience, I like starting from a blank story, then tapping the squiggle line icon, choosing a color, and holding my finger down on the screen to change the background.
