Super easy! Open Instagram and go to your profile. Tap 'Edit Profile' and then tap the email field. Update it with your new email, confirm the change via the email you receive, and you're done!
Just went through this last week! Update it via 'Edit Profile' on your profile page. Then make sure you verify it through the email sent!
