Alright, so if you wanna change your Xbox 360 email, here's the scoop: Go to the settings menu on your console, then navigate to 'Account Management.' From there, select 'Microsoft Account' and follow the prompts to change your email. Make sure your new email isn't linked to another Microsoft account!

Simple! First login to your Xbox account on a computer. Go to 'Your Info' > 'Manage how you sign in to Microsoft' and then add your new email. Once confirmed, you can remove the old one.
