Just go to Xbox.com, log in, go to 'My Microsoft account,' and update the birthdate. You'll need to sign out and back in for changes to take effect.

You gotta go to your Xbox settings and navigate to account and family settings. Change the birthdate under personal info... voila, adult status achieved.
