If you want to change the difficulty, you'll need to start a new save file. Just pick the mode you want when you start a new game.
Here's the deal: once you start a game, you're locked into that difficulty. Start a new game to change it up.
I learned this the hard way - you can't change difficulty on an existing save. Start fresh and choose a new mode!
