To evolve Eevee into specific forms, use the naming trick: name your Eevee 'Sparky' for Jolteon, 'Rainer' for Vaporeon, 'Pyro' for Flareon, 'Sakura' for Espeon, 'Tamao' for Umbreon, 'Linnea' for Leafeon, 'Rea' for Glaceon, and 'Kira' for Sylveon before evolving. This trick only works once for each evolution though!

Walk your Eevee as your buddy for 10 km, then evolve it during the day for Espeon or at night for Umbreon. Make sure you're not using any special lures!

Use a Mossy Lure Module on a Pokéstop to evolve Eevee into Leafeon, or a Glacial Lure Module to get Glaceon. Easy peasy!
