To change your name in Splatoon, you need to change your Nintendo Switch profile name. Go to System Settings > Users > Your Profile, and you can edit it there. Voila, new inkling identity!
From personal experience, I simply changed my Nintendo Switch profile name, and it updated in Splatoon. Super easy!
