Unfortunately, once you set your date of birth on PSN, you can't change it through the PSN account management settings. You'll need to contact PlayStation Support directly. It's a bit of a hassle, but they're usually pretty helpful!
Honestly, you can’t change your date of birth on PSN unless you contact support. Just make sure to have some patience!
