You can use Bluetooth too! Go to Settings > Devices & connections > Accessories, and put your mouse in pairing mode. Select your mouse and pair it up!
I tried it myself, and trust me, it's super simple. Just plug in the dongle, and it worked flawlessly for me.
Not all wireless mice are compatible with Xbox. You might need to check the compatibility list beforehand.
