Sorry, you can't directly connect AirPods Max to PS5 via Bluetooth since PS5 doesn't support Bluetooth audio. But you can use a Bluetooth transmitter with an optical audio input attached to your PS5 to make it work!

Bluetooth adapters are the way to go! I use the Avantree Leaf and it works smoothly with my AirPods Max on my PS5. No issues so far!
