Use an HDMI capture card if you want to use your laptop as a display for your PS3. Connect the PS3 to the capture card, and then plug the capture card into your laptop via USB. Software like OBS will let you view the gameplay.

I've done it by setting up a media server with Universal Media Server. Easy to install and works like a charm! Keep both devices on the same Wi-Fi.

Honestly, you can't just connect a laptop as a display for the PS3 directly. They aren't designed for that.
