Just plug your USB headphones into one of the USB ports on the front of the PS3. Then go to Settings > Accessory Settings > Audio Device Settings to switch the input/output to your headphones.

I always just plug them in and go to Settings > Accessory Settings > Audio Device Settings. Click on 'Output Device' and select your USB headphones. Easy peasy!

From personal experience, some USB headphones don't get detected by the PS3. You might need to try a different pair or use a USB adapter.
