I make it by first searing the chicken breast until it's golden, then remove it from the pan. In the same pan, sauté onions, garlic, and ginger, then toss in curry powder. Add diced tomatoes or tomato puree, let it cook down, and add coconut milk. Toss the chicken back in and simmer till cooked through.
