You can't create your own zombie server in PUBG Mobile, but you can play the official zombie modes that are available in the game. These come and go with different updates, so keep an eye out!

PUBG Mobile doesn't allow players to create custom zombie servers. Stick to the official zombie modes offered during special events.

From personal experience, they roll out zombie modes often. Just jump in when they announce one. Custom servers aren’t a thing here.
