First things first, bring fire! The Elder is weak to fire, so set up Bonfires and use Fire Arrows to make BBQ outta that bark.

I took him down by kiting him around some pre-placed Bonfires and just hammering him with Fire Arrows from a distance. Keep moving and avoid his roots!
