You can delete an Xbox profile by navigating to Settings, choosing Account, selecting Remove accounts, and then picking the profile you want to delete. Done!

Just a heads-up: Deleting a profile on Xbox only removes it from that specific console. The account itself isn't deleted from Xbox Live.
