Use a reference image to make things easier. Draw the outline of the dragon's head first, and then work on the body. It helps to break it down into basic shapes before adding details.

From my experience, I always start with the dragon’s head in the center of a circle. Then, slowly sketch the body, making sure the curves match the logo’s iconic ‘S’ shape. Be patient and take your time to get those intricate details just right!
