Honestly, just start the game and leave them to it. They'll play until you decide otherwise.
All you gotta do is start the chess game and then go do something else IRL. Your Sims will keep at it forever unless you interrupt them.
From my experience, just initiate a chess game and don’t assign any new tasks. They’ll keep playing, letting you focus on other things.
