To evolve an Eevee into an Espeon, you can use the nickname trick by nicknaming your Eevee 'Sakura' and then evolving it. This trick works only once. For subsequent evolutions, make Eevee your buddy and walk 10km with it. Then evolve it during the day.

I've done this before: Walk your Eevee 10km as your buddy and evolve it in the daytime. Make sure it's still set as your buddy before evolving!
