From my experience, search the Swamp biome for fire geysers. Surtlings drop plenty of cores when defeated. Warning: it gets hot and dangerous!

The best spot for surtling cores? Head to the Black Forest caves! Look for Burial Chambers. Those creepy dungeons are packed with cores. Just make sure your torch is handy; it's dark in there!
