Honestly, best way? Quit to the main menu and reload your game. Your vehicle will be magically un-flipped. Classic glitchy goodness!
I've had my fair share of flipped cars. Just find another vehicle and use it to nudge your car back onto its wheels. Low-speed impact works wonders!
Play soccer with zombies using your car - you'll be surprised how often it flips back over! Might take some finesse but it's hilarious.
