First off, get yourself to an airport or find a plane just chilling somewhere. Then, hop in by pressing Triangle. Once you're in, take off by pushing up on the Left Analog Stick to lift the nose, and use X to accelerate. Flying is all about balance, so adjust with the analog stick to keep it steady. To land, do the exact opposite - ease off the X (throttle), and gently push down on the Left Analog Stick to descend. Good luck, and don't forget your parachute!
