Tbh, just use a walkthrough. No shame in getting a little help when you're stuck.
You basically need to complete all the main levels, side missions, and time trials in the game. Also, make sure you collect all the gems to unlock extra secret areas where some eggs might be hiding. I got my last egg from a Speedway level - they can be tricky but also super fun!
