In Spyro, butterflies are released when you defeat fodder creatures like sheep or frogs, healing Sparx and giving you extra lives. Just charge or flame those critters, and Sparx will handle the rest!
In my experience, finding butterflies is all about taking down the little animals in the game. Sparx will munch on them to restore health.
