Just buy it from the in-game store if you have enough Yen. Easiest way if you don't want to grind too hard.
You can get the Champion Katana by defeating the final boss in the Infinity Castle raid. It's a tough fight, so make sure you're prepared!
Hot take: Don't bother with it, other weapons are way better for the effort.
