The naming trick is the easiest way! Rename your Eevee to 'Rainer' for Vaporeon, 'Sparky' for Jolteon, 'Pyro' for Flareon, 'Sakura' for Espeon, 'Tamao' for Umbreon, 'Linnea' for Leafeon, 'Rea' for Glaceon, and 'Kira' for Sylveon before evolving. It works only once per evolution though.

To evolve Eevee into Leafeon or Glaceon more than once, use a Mossy Lure Module for Leafeon and a Glacial Lure Module for Glaceon while standing near the respective module. For Espeon and Umbreon, walk 10km with Eevee as your buddy and evolve it during the day for Espeon or at night for Umbreon.
