You can unlock Ganondorf in Super Smash Bros Brawl by clearing Classic Mode with Link or Zelda on any difficulty, or just play 200 VS matches.
From experience, in Smash for 3DS/Wii U, I unlocked Ganondorf by clearing Classic Mode with Link on intensity 5.0 or higher. Felt epic!
