If you want a green Espeon, you might be out of luck! Espeon's shiny form is actually bright green, but that's not available in the game either. Stick with the classic purple for now!
Green Espeon doesn't exist in Pokemon GO, but you can evolve your Eevee into a regular (purple) Espeon by walking it as your buddy for 10km and evolving it during the day.
Green Espeon? Not gonna happen unless Niantic decides to make a special edition just for you. Until then, enjoy its regular or shiny purple form!
