To get more beds, you need to upgrade your Castle. Go to your island's Castle and select the 'Upgrade' option. It might cost some coins or diamonds, but it's worth it for more monster room!

Personal experience: Upgrading your Castle did the trick for me every time. Just save up those coins or diamonds and go for it!
