In my experience, the easiest place to find mushrooms is in cave systems. They tend to spawn in the dark, damp areas underground.
You can find mushrooms in the Swamp biome, too. Look for them around the murky waters and under trees.
Pro tip: grow your own! Collect a couple of wild mushrooms and plant them back at your base under some dark conditions.
