To get plague fever down in State of Decay 2, you'll need to administer Plague Cure. Collect enough Plague Samples from those zombie-infested areas, craft the cure at your infirmary, and save your survivor!

As soon as your survivor shows symptoms, rest them in an infirmary with at least a level 2 upgrade. Fastest way to stop that fever in its tracks!
