From personal experience, your Pokémon will come back when they run out of motivation and get defeated. Just keep your gym coins rolling in while you wait!
If you want your Pokémon to come back from the gym, the only way is to wait until it's defeated. Once it gets kicked out, it'll come back with some PokéCoins.
