For a more consistent way, use the naming trick for the first evolution, and then either evolve randomly, or use specific methods like walking 10km and evolving during the day for Espeon or at night for Umbreon. For the Gen 4 evolutions, Leafeon and Glaceon, evolve Eevee near a Mossy Lure or a Glacial Lure respectively.
From personal experience, I evolved my Eevee into Sylveon by setting it as my buddy and earning 70 hearts with it. It took a bit of time, but it was worth it!
Honestly? Just rename your Eevee to one of the special names for each evolution! After that, it's back to random.
