Open Settings > Gaming > Xbox Game Bar and toggle it off! No more pop-ups while you're mid-game.

You can also uninstall it: open PowerShell as Admin and type 'Get-AppxPackage *XboxGameOverlay* | Remove-AppxPackage'.

I just disabled it in Task Manager > Startup tab. Works like a charm!
