To get stretched res on Fortnite, go to NVIDIA Control Panel > Adjust Desktop Size and Position > Select 'Full-screen' under Scaling, and then change the resolution to your desired stretched res. Make sure to match this resolution in-game under display settings!

I tried this and it worked: Open your NVIDIA Control Panel, navigate to Change Resolution, click Customize, and create your custom resolution. Then apply the same in Fortnite settings. Voila!
