The easiest way to get an Eeveelution in Pokémon GO is to use the nickname trick! Name your Eevee specific names before evolving: for Vaporeon, use 'Rainer'; for Jolteon, use 'Sparky'; for Flareon, use 'Pyro'; for Espeon, use 'Sakura'; for Umbreon, use 'Tamao'; for Leafeon, use 'Linnea'; for Glaceon, use 'Rea'; and for Sylveon, use 'Kira'. This trick works only once per evolution, so choose wisely!

If you've already used the nickname trick, you'll need to evolve your Eevee through other methods. For Vaporeon, Jolteon, and Flareon, evolve your Eevee randomly using 25 Eevee candies. For Espeon and Umbreon, walk your Eevee as your buddy for 10km and then evolve it during the day for Espeon or at night for Umbreon. For Leafeon and Glaceon, evolve your Eevee near a Mossy Lure or Glacial Lure, respectively. For Sylveon, earn 70 Buddy hearts with your Eevee.
I've tried the nickname trick and it worked like a charm for me! Just make sure you spell the names right!
