Easy peasy! You need to unlock the Wing Cap. Head to the castle's main hall, look up at the light shining down from the ceiling, and you'll be transported to a Wing Cap course. Complete it to activate all red blocks!

To unlock the red blocks, find the secret level in the castle lobby. Look up at the light, complete the course, and boom - red blocks activated!

You just gotta complete the Wing Cap level. To get there, stand in the main lobby, look up into the light, and fly away.

Speaking from experience, the red blocks become available once you tackle the Wing Cap level. It's hidden in the castle lobby under the shaft of light. Good luck flying!
