Just plant the gemcorns in stone in the underground layer. No water or special care needed. Terraria isn't a farming sim.

Growing gem trees in Terraria is pretty simple but super cool for your world. First, you need to get some gems, which can be mined from underground. Then, make sure you've got an acorn. Combine the gem with an acorn at a workbench to create a gemcorn. Now, find or dig yourself an underground area where stone blocks are. Plant the gemcorn in the stone, not dirt, and give it some space to grow. Just wait a bit, and boom, you'll have a gem tree ready to harvest more gems!

Actually, growing gem trees is a waste of gems. Just mine them. Much faster and you don't need to wait for trees to grow.
