Just hit it! Well, not literally. If it's ripe and ready, clicking or tapping directly on the crop should do the trick. Make sure not to use your tools though; you don't wanna accidentally chop your precious crops down.
Pro tip: Use the scythe for harvesting wheat and other similar crops. It saves you a ton of time and effort compared to trying to pick them one by one.
